There is at least one Muay Thai fight event scheduled in Bangkok on any day of the week, while on some days you can choose even from 3-4 stadiums. The biggest number of fight events and the highest quality of fights can be expected on weekends, while on Thursday and on most Wednesdays only one stadium is open. 

In Bangkok, most of the fight nights are scheduled to start at around 18:00-19:00. However, on weekends there are events that start much earlier, as Thai boxing fights are broadcast on TV.
